Cashew “Raw”cotta

Who knew that you could make your own “cheese” out of nuts? Cashews have the same feel as cheese, as well as a healthy fat content and delicious flavour.


1/2 cup cashews (soaked in water for 1 hour)
1 tsp nutritional yeast
1 handful of basil, or 1 to 2 tsp dried basil
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
Olive oil, if necessary (for consistency)


1. Drain cashews. Place them in a food processor with yeast, dried herbs, salt and pepper. Process until the mixture takes on the consistency of ricotta cheese. Add olive oil if necessary.
2. Sprinkle “cheese” on raw pizza crust, raw pasta (zucchini noodles) or a salad.

If you are allergic to nuts, this recipe can alternatively be made with hemp seeds.
