Bamboo was able to snag an interview with socialite and philanthropist Cornelia Guest this month (check out the conversation here), and the animal rights activist and vegan caterer was so kind that she even shared her three favourite recipes with us. These easy, healthy recipes are meant to be made in 15 minutes or less.

ROASTED FENNEL

This is one of my favourite dishes; I love fennel!
4 fennel bulbs
2 tbsp olive oil
Salt
Pepper

Preheat oven to 220°C (425°F).
1. Put a baking tray in the oven to let it heat up.
2. Slice fennel into 1/4-inch slices.
3. Put fennel slices in a bowl, and add olive oil, salt and pepper to taste.
4. Take the hot pan out of the oven, put the fennel in, and let it cook until golden, about 20 minutes.

ROAST SQUASH STUFFED WITH QUINOA

Absolutely delicious.
1 winter squash
Olive oil
Quinoa

Preheat oven to 220°C (425°F).
1. Cut a winter squash in half, drizzle olive oil over it, and cook until soft, about 30 to 40 minutes.
2. Make quinoa (I love adding peas to mine).
3. Put quinoa in and all over your squash.
4. Serve and enjoy.

ROASTED CHESTNUTS

Great snack, and they smell delicious.
1. Put fresh chestnuts in a hot pan, lower the heat, and let them cook (kind of like popcorn).
2. Keep the chestnuts moving in the pan so they don’t burn.
3. You’ll know they are cooked when their shells start to crack.
4. Peel and eat.
