Granola is a food, but it is also used as an adjective to describe people who, some might say, are a bit like me. Someone who tends to be environmentally conscious, organic, open minded and liberal leaning, and, at times, who may even be seen sporting Birkenstocks. In fact, it wasn’t until I started making granola from scratch that I began to dig around to find out exactly what granola is. Did you know that it was invented in New York in 1894 at a chic health spa called The Jackson Sanatorium?

Buying granola may not always be the best option. Premium brands can be pricey, and, too often, the mix is not quite right. For example, you may find a mix with far too little dried blueberries or way too many raisins. Follow these simple guidelines to make granola your own way. It’s sure to be the best granola you’ve ever tasted.

 

 

The From Scratch Method

It takes just minutes to combine the ingredients for your perfect granola.
Pre-heat your oven to 135°C (275°F).
Prepare the simple syrup first by combining the following over medium heat:

  • 1/2 cup organic sugar
  • 1/8 cup local honey
  • 1/8 cup molasses
  • 1/2 cup water
  • Get creative—boost the flavor factor with ingredients like vanilla or grated fresh ginger. 

Next, grab a big bowl and fill it with:

  • 6 cups Bob’s Red Mill old-fashioned oats
  • 2 cups extras, such as unsalted nuts, seeds, ground flax or coconut (no dried fruit just yet)

Combine the simple syrup with the oats and your big bowl full of dry ingredients.
It takes about an hour to bake, so make yourself a cup of tea and relax!
After removing the granola from the oven, garnish it with dried fruit. A sprinkle of salt can also really bring out the flavours.
The granola can be left out overnight to cool and stored the next day.
