Pistachio Brittle

This is a quick and easy treat to make and to keep on hand for dessert at any time.

Ingredients:

1+1/4 cup maple syrup
3/4 cup brown rice syrup
1/2 cup water
1 1/2 cup pistachios

Directions:

Preheat oven to 300°F (150°C)

1. Prepare a sheet pan with a silpat (silicone baking mat).
2. Combine maple syrup, brown rice syrup and water in a pot. Cook on medium-low heat.
3. Add nuts, and then quickly stir and pour into pan.
4. Using an oiled rubber spatula, spread mixture out and let cool to room temperature before breaking into pieces.

Brown rice syrup is a nice alternative sweetener to include in baked goods. It does not spike blood sugar as quickly as many other sweeteners.
